THIS HOMEMADE CINNAMON IS PERFECT FOR MAKING OUR APPLE & BLACKBERRY GINBLE, OR SIMPLY POUR ON YOUR PANCAKES!
1 cup caster sugar
1 cup water
3 cinnamon sticks
1 tsp vanilla extract
Put equal parts sugar and water (We use 1 cup of each) into a saucepan. Bring to the boil, stirring continuously until sugar dissolves. Turn down the heat, add the cinnamon sticks and let the mixture simmer until it thickens. Add a teaspoon of vanilla extract and stir. Remove pan from the heat and allow to steep for at least an hour. Transfer into a clean glass jar, add a cinnamon stick and allow to cool. Cover and keep in refrigerator for a month.
